Mother’s Day Brunch

Mother’s Day is Sunday, May 9th and for whatever reason this day is notorious with Brunch. Perhaps husbands and children can only handle cooking Breakfast type items? I’m not sure…but Brunch is fun and I’ve assembled some of my favorite Paleo and Whole30 recipes for you to pass on to whomever is cooking that weekend.

Let’s start with Eggs- a great source of protein but perhaps they need a little something special to honor Mom. Check out this recipe for a fail proof Frittata, courtesy of The Healthy Little Peach.

Waffles are a fan favorite and the toppings are so versatile. Try bananas, strawberries, blueberries or your traditional butter and syrup. I also love making Coconut Whipped Cream in my Mini Cream Whipper. As for the Waffles, this gluten free recipe for Classic Paleo Waffles from the Paleo Running Mama are a crowd pleaser. And this Waffle Maker is one that we have used countless times in our home. The flip is so fun!

More of a Pancake person? Light and Fluffy Gluten Free Pancakes are the way to go in this recipe from the What the Fork blog. My favorite Gluten Free flour after many taste tests over the years is King Arthur. My family cannot tell the difference in the taste or texture.

Or if you really want to save time, use the King Arthur Gluten Free Pancake Mix which is also delicious!

And of course we need Bacon! But try this one sheet method of cooking it in the oven from Just Jesse B. Perfect bacon every time. I use these Baking Sheets from Williams Sonoma. I think I own 5 and they are used daily and well loved for sure.

And lastly, if you are really short on time you can always make a Coffee Cake Muffin the day prior, courtesy of Real Food With Jessica. Serve with a side of fruit and a big pot of coffee. Lots of coffee.

And if Mom needs a little something stronger than Coffee, then treat her to the old Brunch standby- a Mimosa. I make mine with Gallivant Bubbly White, an organic, no sugar added option that adds the perfect amount of fizz without the nasty side effects of traditional Champagne. Goodbye headaches.
