Whole30 Compliant Pesto

When I gave up Dairy I thought my days of enjoying Pesto were over.  Then I discovered that with the right combination, Pesto can be just as delicious minus the cheese.  The beauty of this recipe is that you can swap out the greens or nuts with many different combinations.  Don't have arugula- swap in spinach.  Don't have walnuts- swap in almonds.  Don't like rosemary- add basil instead.  

We use this as a dip, a "sandwich spread" on lettuce cups, a sauce for spaghetti squash or zucchini noodles or a fabulous drizzle over fish or meat. You can also add it to amp up your chicken salad.  So fresh, so easy and such a great summer addition to your meal prep!    

2 cups Arugula

1 clove garlic

1 teaspoon lemon zest

1/2 cup toasted walnuts

1 Tablespoon lemon juice

1 Tablespoon chopped fresh Rosemary

1/2 cup olive oil

1/2 teaspoon  salt

Throw everything in a food processor and blend.  Keep in refrigerator.
